Ingredients:

  • 113 grams of unsalted butter, room temperature
  • 55 grams of white sugar
  • 140 grams of plain flour
  • 110 grams of walnuts, finely chopped
  • A pinch of fine sea salt
  • 1 teaspoon of pure vanilla extract

For the Biscoff Topping:

  • 50 grams of Biscoff spread or any preferred cookie butter
  • 50 grams of icing sugar, sifted

Cooking Instructions:

  1. Preheat your oven to 175°C (350°F) and prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, whip the room-temperature butter with the white sugar and vanilla extract until the mixture is pale and fluffy, which should take about 3 to 5 minutes with an electric mixer.
  3. In another bowl, whisk together the plain flour and a pinch of salt, then add the dry mixture to the creamed butter and sugar. Incorporate the finely chopped walnuts until the mixture comes together as a dough.
  4. With clean hands, roll the dough into small balls, about 30 grams each. Roll each ball in icing sugar to coat them lightly and place them on the baking sheet.
  5. Press down on each dough ball to flatten slightly. Bake in the preheated oven for 12 to 15 minutes until they are just set and have a light golden hue.
  6. Allow the cookies to cool on the sheet before topping each one with a teaspoon of Biscoff spread. The topping will firm up slightly as it sits, creating a delightful contrast to the crumbly cookie.
