Decadent Chocolate Coconut Dream Cake with Two-Ingredient Ganache Frosting

Ingredients:

  • Cake:
    • 300g self-rising flour
    • 60g cocoa powder
    • 1 tsp baking powder
    • 1/4 tsp baking soda
    • 150g light brown sugar
    • 360ml dairy-free milk mixed with 1 tsp vinegar
    • 100g coconut yogurt
    • 80g coconut oil
  • Frosting:
    • 1 can coconut milk, chilled overnight
    • 200g dark chocolate

Method:

  1. Begin with the frosting. Scoop out the solid coconut cream from the chilled coconut milk. Heat it until it's almost boiling.
  2. Place the chocolate in a bowl and pour the hot coconut cream over it. Cover with a towel and let it sit for 5 minutes to melt the chocolate. Stir well and let it cool and thicken.
  3. Preheat your oven to 170°C and line three 6-inch round cake tins.
  4. Mix dairy-free milk and vinegar and set aside to thicken.
  5. Sift together the dry ingredients in one bowl.
  6. In another bowl, mix the wet ingredients.
  7. Gently combine the wet and dry ingredients until just mixed.
  8. Divide the batter among the cake tins and bake for 20-25 minutes.
  9. Once the ganache has cooled and thickened, whip it in a stand mixer until creamy.
  10. Frost the cooled cakes with the chocolate coconut cream frosting.
