Chocolate-Almond Sponge Ingredients:

  • 80g unsalted butter
  • 115g milk chocolate
  • 75g heavy cream (33%)
  • 280g eggs
  • 45g cocoa powder
  • 130g all-purpose flour
  • 50g almond flour
  • A pinch of salt
  • 200g sugar
  • Spices: cinnamon, ginger, cardamom

Sponge Preparation:

  1. Preheat the oven to 170°C (338°F).
  2. Beat half of the sugar with egg yolks and the other half with egg whites until fluffy.
  3. Heat the cream and pour over the chocolate. Add the butter and mix.
  4. Combine dry ingredients: flour, cocoa, almond flour, spices, and salt.
  5. Fold the dry mixture into the egg-yolk mix, followed by the chocolate mixture.
  6. Gently fold in the whipped egg whites.
  7. Bake in a 22-24 cm diameter pan for 50-55 minutes.
  8. Wrap the warm sponge in cling film and refrigerate for 4-8 hours.

Chocolate Mascarpone Mousse:

  • 35g egg yolks
  • 25g sugar
  • 120g milk
  • 5g powdered gelatin
  • 15g water
  • 130g milk chocolate
  • 70g heavy cream
  • 135g mascarpone cheese

Mousse Preparation:

  1. Soak gelatin in water.
  2. Heat milk, whisk egg yolks with sugar, and combine with the milk. Cook until 82°C (179.6°F).
  3. Add swollen gelatin to the mixture.
  4. Pour over the chocolate and blend until smooth. Add mascarpone and blend again.
  5. Whip the cold cream and fold into the chocolate mixture.

Assemble the cake with layers of chocolate sponge, mascarpone mousse, and sprinkled peanuts for a delightful crunch.
