  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon sea salt
  • 50g vegan block-style butter

For the Crumble Topping:

  • 120g all-purpose flour
  • 50g soft brown sugar
  • 50g granulated sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon sea salt
  • 70g vegan block-style butter, room temperature and cubed

For the Cream Cheese Filling:

  • 400g vegan cream cheese, room temperature
  • 100g granulated sugar
  • 50g soft brown sugar
  • 200ml vegan heavy cream, room temperature
  • 200g vegan Greek-style yogurt, room temperature
  • 1 tablespoon vanilla extract
  • 45g cornstarch

For the Apple Filling & Topping:

  • 250g apples, diced
  • 1 teaspoon lemon juice
  • 2 tablespoons soft brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • 2 teaspoons cornstarch

Instructions

  1. Begin by preparing the vegan buttermilk and melting the vegan butter for the dough. Preheat your oven for roasting the sweet potatoes, then adjust for baking the cheesecake.
  2. Blend the melted butter with vanilla into the buttermilk. In a large bowl, combine flour, sugar, yeast, and salt, and mix with the buttermilk mixture to form the dough.
  3. After proofing the dough, prepare a cake pan and press in the cookie mixture for the crust. Par-bake and set aside.
