Ingredients:

For the Cookie Dough:

  • 113 grams (1 stick) unsalted butter, melted
  • 200 grams (1 cup) brown sugar
  • 1 large egg
  • 2.5 ml (1/2 tsp) vanilla extract
  • 167 grams (1 1/3 cups) all-purpose flour
  • 5 grams (1 tsp) baking powder
  • 1.5 grams (1/4 tsp) salt
  • 5 grams (1 tsp) apple pie spice or nutmeg
  • 5 grams (1 tsp) cinnamon

For the Apple Filling:

  • 3 medium apples, peeled and diced
  • 50 grams (1/4 cup) brown sugar
  • 15 ml (1 tbsp) lemon juice
  • 5 grams (1 tsp) cinnamon
  • 2.5 grams (1/2 tsp) apple pie spice
  • 2.5 ml (1/2 tsp) vanilla extract

For the Crumble Topping:

  • 50 grams (1/4 cup) brown sugar
  • 23 grams (3 tbsp) all-purpose flour, heat-treated
  • 42-56 grams (3-4 tbsp) unsalted butter, softened

For the Drizzle:

  • 60 grams (1/2 cup) powdered sugar
  • 45-60 ml (3-4 tbsp) milk or heavy cream

Directions:

  1. Kick off by preheating your oven to 175°C (350°F). Prep your muffin tin with non-stick spray. Create either 10 regular-sized or 24 mini cookie cups. To heat-treat the flour for the crumble, spread it on a baking sheet and pop it in the oven for 5 minutes.
  2. Whisk together the melted butter and brown sugar until they’re well blended. Add the egg and vanilla extract into the mix.
  3. In a separate bowl, mix together the dry ingredients: flour, baking powder, salt, apple pie spice, and cinnamon. Gently fold this into the wet mixture until just combined.
