Recipe:

Ingredients for the Cake (18cm mold):

  • 80g flour
  • 1 packet baking powder
  • 25g unsweetened cocoa powder
  • A pinch of salt
  • 3 eggs
  • 80g sugar

For the Syrup:

  • 100ml milk
  • 20g cocoa
  • 2 tbsp instant coffee
  • Boil all ingredients together, then let cool.
  1. Whisk eggs and sugar until the volume doubles. Sift together flour, cocoa, and baking powder.
  2. Gently fold the dry ingredients into the egg-sugar mixture. Bake at 180°C for 20 minutes.
  3. Once baked, poke holes in the cake with a toothpick and pour over the cooled syrup.

For the Cream:

  • 100g dark chocolate
  • 100g milk chocolate
  • 40cl cream
  • 2 tsp chicory/coffee powder
  1. Melt the chocolates in a bain-marie.
  2. Warm 10cl of cream in a saucepan. Gradually pour the cream over the melted chocolate, stirring to achieve a smooth mixture.
  3. Set aside a tablespoon of this chocolate mixture for decoration.
  4. Whip 30cl cream to stiff peaks, adding chicory/coffee powder.
  5. Gently fold the whipped cream into the cooled melted chocolate.
  6. Pour the chocolate cream mixture over the cake base.
  7. Use the reserved melted chocolate to create parallel lines for decoration, then draw perpendicular lines with a toothpick for a pattern.
  8. Refrigerate for at least 5 hours before serving.
