Ingredients (All at room temperature):

  • 500g spreadable white cheese (or Philadelphia cheese if available)
  • 3 large eggs
  • 200g sugar (1 cup + 2 tablespoons)
  • 250ml cream
  • 18g flour (2 level tablespoons)
  • ½ teaspoon vanilla extract or 1 packet vanilla sugar (optional)

Instructions:

  1. Preheat the oven to 230°C with fan setting. Line a 19 cm mold (or 26 cm for a double batch) with parchment paper, allowing it to slightly overhang the edges.
  2. In a food processor, whip the cheese for 1 minute at high speed. Add sugar and blend for another minute.
  3. Incorporate eggs one at a time, mixing thoroughly after each addition.
  4. In a separate bowl, sift flour into the cream and mix well. Add this mixture to the cheese and blend until uniform.
  5. Pour the batter into the mold and bake until the top is golden, which took about 20 minutes in my case. Check at 12 minutes and rotate if browning unevenly. Every oven is different, so keep an eye on it. In my oven, it takes about 20-22 minutes.
  6. For a less firm center, bake at high temperature and remove as soon as it sets. Alternatively, for a firmer texture, bake at 200°C for a longer duration.
  7. Allow to cool to room temperature, then refrigerate for at least 4-5 hours before serving.
