    • 25ml water
    • 100g white chocolate
    • 50ml whipping cream

    • 5g gelatin
    • 25ml water
    • 100g dark chocolate
    • 50ml whipping cream
    • 1 tablespoon Nutella or similar hazelnut spread
    • 150ml whipping cream (35% fat content)
  • For the Glaze:
    • Speculoos spread, melted for the first half
    • 200g coating chocolate
    • 3 tablespoons vegetable oil

Instructions:

  1. Prepare the Gelatin:
    • For both layers, dissolve 5g of gelatin in 25ml of water and let it bloom for about 5 minutes.
  2. White Chocolate Mousse:
    • Heat 50ml of whipping cream and pour over 100g of white chocolate to melt. Stir until smooth.
    • Stir in the bloomed gelatin until fully dissolved.
    • Whip 150ml of cream to soft peaks, then fold into the melted white chocolate mixture along with a tablespoon of Speculoos spread.
    • Pour into the base of your dessert container and let set in the refrigerator.
  3. Dark Chocolate Mousse:
    • Repeat the process with dark chocolate and Nutella. Heat 50ml of whipping cream and pour over 100g of dark chocolate to melt. Stir in the bloomed gelatin.
    • Whip another 150ml of cream and fold into the chocolate along with a tablespoon of Nutella.
    • Carefully pour over the set white chocolate layer and return to the fridge to set.
  4. Prepare the Glaze:
    • For the first half, gently heat the Speculoos spread until it becomes liquid. Spread it over the set dark chocolate layer.
    • For the second half, melt the coating chocolate and mix it with three tablespoons of vegetable oil. Pour this over the other half of the dessert to create a two-tone effect.
