Ingredients:
- 1 2/3 cups (200g) all-purpose flour
- 1/2 cup (50g) high quality Dutch cocoa powder
- 1/2 cup (113g) vegan butter or melted coconut oil
- 6 ounces vegan chocolate chips
- 1/3 cup (80ml) soy milk, room temperature
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) brown sugar
- 2 tbsp ground flaxseed mixed with 1/2 cup coffee or 1/2 cup (100g) unsweetened applesauce
- 1 tsp vanilla extract
- Additional 1/2 cup (80g) vegan chocolate chips
Instructions:
- Prepare the Flaxseed Mixture:
- Preheat your oven to 350°F (175°C).
- Grease and line an 8x8 or 9x9 inch baking pan with parchment paper.
- In a small bowl, mix the ground flaxseed with the coffee or unsweetened applesauce. Set aside to thicken.
- Mix the Wet Ingredients:
- In a large mixing bowl, whisk together the granulated sugar, brown sugar, soy milk, vanilla extract, and the thickened flaxseed mixture. Whisk until the sugar granules are mostly dissolved. Set aside.
- Prepare the Chocolate Mixture:
- In a microwave-safe bowl or on the stovetop, heat the vegan butter until melted.
