Ingredients:

  • 1 2/3 cups (200g) all-purpose flour
  • 1/2 cup (50g) high quality Dutch cocoa powder
  • 1/2 cup (113g) vegan butter or melted coconut oil
  • 6 ounces vegan chocolate chips
  • 1/3 cup (80ml) soy milk, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 2 tbsp ground flaxseed mixed with 1/2 cup coffee or 1/2 cup (100g) unsweetened applesauce
  • 1 tsp vanilla extract
  • Additional 1/2 cup (80g) vegan chocolate chips

Instructions:

  1. Prepare the Flaxseed Mixture:
    • Preheat your oven to 350°F (175°C).
    • Grease and line an 8x8 or 9x9 inch baking pan with parchment paper.
    • In a small bowl, mix the ground flaxseed with the coffee or unsweetened applesauce. Set aside to thicken.
  2. Mix the Wet Ingredients:
    • In a large mixing bowl, whisk together the granulated sugar, brown sugar, soy milk, vanilla extract, and the thickened flaxseed mixture. Whisk until the sugar granules are mostly dissolved. Set aside.
  3. Prepare the Chocolate Mixture:
    • In a microwave-safe bowl or on the stovetop, heat the vegan butter until melted.
    • Add the 6 ounces of vegan chocolate chips to the melted butter and let them sit for a few seconds to soften, then whisk until smooth.
    • Add the cocoa powder to the chocolate mixture and whisk until well combined.
  4. Combine Mixtures:
    • Use a rubber spatula to spoon the chocolate fudge mixture into the sugar mixture. Whisk until well combined.
