Elegant Chocolate Air Cake

Ingredients Required:

  • 1 tablespoon of unsalted butter
  • 1 tablespoon of all-purpose flour
  • 1 to 1.5 glasses of chilled milk
  • A small dash of salt
  • 100 grams of fine-quality dark chocolate (with 70% cocoa)
  • 1 teaspoon of pure vanilla essence
  • 1 large egg yolk
  • 2 large egg whites
  • 3 tablespoons of granulated sugar
  • A little cocoa powder, for the final garnish

Baking Directions:

  1. Heat the oven to a vigorous 200°C (392°F).
  2. In a pot over a gentle flame, combine butter until melted, then whisk in flour for a minute.
  3. Introduce cold milk gradually, constantly stirring until the blend thickens. Infuse with a hint of salt and the vanilla essence.
  4. Melt the dark chocolate in a bowl, then amalgamate with the warm milk blend until you achieve a seamless chocolate base.
  5. Whisk in the egg yolk to the chocolate base until thoroughly incorporated.
  6. In a clean bowl, whip the egg whites to a froth, and as they stiffen, sweeten with sugar to firm peaks.
  7. Fold the fluffy egg whites into the chocolate base with care.
  8. Fill the soufflé molds to three-quarters, level the tops, and slide into the oven.
  9. Let bake for roughly 12 minutes until they puff up and boast a crusty top.
  10. Once done, dust with cocoa powder for a touch of elegance.
