  • 125ml milk

  • 200ml heavy cream
  • Optionally, 1 sachet of cream stabilizer (kremfix)

  • 150g fresh blueberries
  • 2 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water

Preparation:

  1. For the crust, mix all ingredients and press into a 20cm diameter mold.
  2. Blend the blueberries with an immersion blender or food processor for the filling.
  3. Whip cream cheese and blended blueberries together. Then mix in the melted white chocolate.
  4. In another bowl, whip the heavy cream (add cream stabilizer if desired). Gently fold everything together into one filling.
  5. Spread the filling over the crust and refrigerate.
  6. For the topping, boil blueberries with sugar and lemon juice. Mix cornstarch with water in a separate bowl. Blend the blueberry mixture, add the cornstarch mixture, and cook for 2 more minutes until thickened.
  7. Cool the topping for about 10 minutes, then carefully spread over the cheesecake. Chill for at least 4 hours, ideally overnight.
