Extra Tall Chocolate Cake

Ingredients:

  • 2½ cups self-rising flour (270 g) or regular flour + 10 g baking powder
  • 3 tbsp cocoa powder
  • 2 tbsp chocolate spread
  • 1 cup oil (180 ml)
  • 1 cup sugar (200 g) + 5 tbsp sugar
  • 10 g vanilla sugar
  • 7 large eggs, separated
  • 100 g dark chocolate
  • 1½ cups boiling water (240 ml)

Instructions:

  1. Melt dark chocolate with 5 tbsp sugar, water, cocoa, and chocolate spread in a small saucepan on low heat until smooth. Set aside to cool slightly.
  2. In a large bowl, whisk egg yolks and oil. Gradually add the chocolate mixture and blend well.
  3. Add flour and mix until smooth and lump-free.
  4. In a mixer, beat egg whites with 1 cup sugar until firm but not stiff.
  5. Fold ¼ of the egg whites into the chocolate mixture thoroughly. Gently fold in the rest of the egg whites with a spatula, using folding motions.
  6. Pour the batter into a greased 22 or 24 cm round pan, or into 4 English cake pans. I used a greased jachnun pot lined with baking paper at the bottom.
  7. Bake in the lower third of the oven at 160°C with fan for about 1½ hours or until a skewer comes out clean. Baking time may vary.
  8. After baking, leave the oven door open for 10 minutes to prevent the cake from collapsing.
