Equipment Needed

To prepare these indulgent overnight oats, you will need:

  • A bowl for mixing
  • A microwave-safe bowl
  • A spoon for mixing
  • A jar or container for overnight storage
  • A microwave

Ingredients:

  • 40g oats
  • 100ml water
  • 1/2 tsp sweetener (optional)
  • Second layer:
    • 10g dark chocolate (non-dairy and sugar-free)
    • 10g high protein plain yogurt (coconut-based)
    • 5-10ml oat milk
    • 2 tbsp hazelnut butter
    • Some crushed hazelnuts to serve (optional)

Instructions:

  1. Prepare the Oat Layer:
    • Mix the oats, water, and sweetener (if using) in a microwave-safe bowl until combined.
    • Microwave for 1 minute, then stir and let it cool slightly.
  2. Prepare the Second Layer:
    • In a separate bowl, mix the coconut yogurt and hazelnut butter until well combined.
    • Spread this mixture over the cooled oat layer.
  3. Prepare the Chocolate Layer:
    • Melt the dark chocolate in the microwave in 30-second intervals, stirring each time until fully melted.
    • Add the melted chocolate to a bowl along with the yogurt and oat milk. Mix well until smooth.
    • Spread this chocolate mixture over the yogurt and hazelnut layer.
  4. Refrigerate:
    • Place the assembled layers in a jar or container and refrigerate for at least 2 hours, or preferably overnight.
  5. Serve:
    • Before serving, crush some hazelnuts and sprinkle them on top for added texture and flavor.
