The Recipe

Crust

  • 2 ½ cups flour (cup size 200ml)
  • ½ packet baking powder
  • 1 small cup (100ml) powdered sugar
  • A pinch of salt
  • 1 egg, room temperature
  • 150g butter, room temperature

Cheesecake Filling

  • 600g cream cheese
  • 200ml heavy cream
  • 1 cup (200ml) sugar
  • 1 packet vanilla sugar
  • Zest of 1 lemon
  • 3 eggs, room temperature
  • 2 heaping tablespoons flour
  • 2 heaping tablespoons cornstarch

Topping

  • Blueberries and red berries (or other fruits of choice)
  • For the crumble, set aside a handful of dough and mix with 3-4 tablespoons flour

Instructions

  1. For the dough, mix all the ingredients and knead well. Let it rest in the refrigerator, covered, for about 30 minutes.
  2. In a mixing bowl, combine all the cheesecake filling ingredients except eggs, flour, and cornstarch. Mix well. Then, add eggs one by one, continuing to mix. Finally, add flour and cornstarch, mixing until smooth. Avoid over-mixing.
  3. Grease a 26cm cake tin. Press the dough into the bottom and sides of the tin. Pour in the cheesecake filling.
  4. Sprinkle the fruits and crumble dough on top. Bake in a preheated oven at 175°C (347°F) until the top is golden. Place a bowl of water at the bottom of the oven. After baking, leave the cheesecake in the oven with the door slightly open for an hour. Then let it cool to room temperature and refrigerate overnight.
