Giant Oreo-Infused Chocolate Muffins

Jumbo Chocolate Oreo Muffin Batter:

  • 240g Milk
  • 280g Ripe Bananas (about 3 bananas, roughly chopped)
  • 90g Granulated Sugar
  • 40g Light Brown Sugar
  • 105g Neutral Oil (like vegetable or canola oil)
  • 15g White Vinegar
  • 260g All-Purpose Flour
  • 30g Cocoa Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 75g Milk Chocolate Chips
  • 60g White Chocolate Chips
  • 7-10 Oreo Cookies, roughly chopped

Baking Method:

  1. Start by preheating your oven to 375°F (190°C). Prepare your jumbo muffin pan by lining it with large muffin liners.
  2. In a mixing bowl, whisk together the milk and vinegar. Let this mixture sit for about 10 minutes until it looks slightly curdled. This is your homemade buttermilk.
  3. To the buttermilk, add the neutral oil, both sugars, and whisk until the sugars are nearly dissolved. Fold in the chopped bananas, ensuring they’re well incorporated.
  4. Sift together the all-purpose flour, cocoa powder, baking powder, and baking soda in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix to keep the muffins fluffy.
  6. Stir in the milk chocolate chips and white chocolate chips, along with three-quarters of the chopped Oreos, folding gently to distribute them throughout the batter.
