Gingerbread Donuts with Ginger Cinnamon Sugar Coating

Ingredients:

For the Gingerbread Donuts:

  • 1 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • A pinch each of ground cloves and ground allspice (optional)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbs unsalted butter, melted
  • 1/4 cup (50 g) brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1/2 cup (120 ml) milk
  • 3 Tbs fat-free Greek yogurt

For the Ginger Cinnamon Sugar Coating:

  • 1/3 cup (66 g) granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 cup (56 g) unsalted butter, melted

Instructions:

Making the Gingerbread Donuts:

  1. Prepare the Oven: Preheat your oven to 350° F. Lightly grease two 6-count donut pans and set them aside.
  2. Dry Ingredients: In a medium-sized bowl, whisk together the flour, ginger, cinnamon, ground cloves (if using), ground allspice (if using), baking powder, baking soda, and salt. Set this aside.
  3. Wet Ingredients: In a separate large bowl, combine the melted butter, brown sugar, and molasses by whisking them together for about a minute. Whisk in the egg until fully incorporated, followed by the milk and yogurt. Ensure all ingredients blend seamlessly.
  4. Combine: Gently fold in the flour mixture into the wet mixture, stirring just until they combine. Avoid overmixing.
  5. Fill the Tins: Carefully spoon the batter into the donut molds, filling each one.
  6. Bake: Transfer the pans to the oven and bake for about 13-15 minutes or until a toothpick inserted comes out clean and the donut springs back when lightly touched.
