  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon

Frosting:

  • [Your chosen frosting recipe]

Instructions:

  1. Begin by preheating your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper to facilitate easy removal after baking.
  2. In a large mixing bowl, whisk together the eggs and sugar for about one minute on medium speed until well combined and slightly thickened.
  3. Pour in the vegetable oil and vanilla extract. Continue to mix for another 30 seconds until the ingredients are thoroughly combined.
  4. Gradually add half of the dry ingredients to the wet mixture. Mix on medium speed for about 20 seconds, remembering to scrape down the sides of the bowl to ensure even mixing.
  5. Add the remaining dry ingredients and mix for an additional 30 seconds until the batter is completely combined.
  6. With a rubber spatula, gently fold the grated carrots into the batter, ensuring they are evenly distributed throughout the mixture.
  7. Divide the batter evenly between the prepared cake pans, smoothing the tops with the spatula.
  8. Place the pans in the oven and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Once baked, remove the cakes from the oven and allow them to cool in the pans for about 10-15 minutes. Then, turn the cakes out onto a wire rack to cool completely before frosting.
  10. Prepare your frosting according to the recipe instructions. Once the cakes are cool, apply a layer of frosting on top of one cake layer. Place the second layer on top and spread frosting over the top and sides of the cake.

Notes:

  • Ensure all your wet ingredients, including the eggs, are at room temperature to achieve a smooth batter.
  • For the frosting, you can choose any vanilla or cream cheese frosting that complements carrot cake well. If you're keeping the cake dairy-free, opt for a dairy-free frosting recipe.
  • If desired, garnish the frosted cake with additional grated carrots, a sprinkle of cinnamon, or chopped nuts such as walnuts or pecans.

This gluten-free carrot cake is moist, full of flavor, and the vanilla extract enhances the natural sweetness and spices. It's a delightful dessert that everyone, regardless of dietary restrictions, can enjoy.
