Gluten-Free Oatmeal Chocolate Layer Bars

These tempting bars layer the wholesome goodness of oats with a rich chocolate center, creating a gluten-free treat that’s both hearty and indulgent.

Ingredients for Oatmeal Base and Crumble:

  • 1 cup unsalted butter, softened
  • 2 cups gluten-free all-purpose flour blend
  • 3 cups quick-cooking rolled oats
  • 2 large eggs
  • 1 and 1/2 cups light brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pure vanilla extract

Chocolate Filling Ingredients:

  • 3/4 cup dark chocolate chips
  • 3/4 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons unsalted butter

Preparation:

  1. Start by preheating your oven to 350°F (175°C). Apply non-stick spray to a 9×13-inch baking dish.
  2. In a large mixing bowl, cream together the butter, brown sugar, and eggs until smooth.
  3. Add the gluten-free flour, oats, baking soda, baking powder, and vanilla extract, and stir until the mixture is well combined.

For the Chocolate Filling:
