For the Crispy Layer:

  • 75g flour (3/4 cup)
  • 75g sugar (slightly less than 1/2 cup)
  • 60g butter, cubed and cold

Choux Pastry:

  • 1 cup water
  • 1 cup flour
  • A pinch of salt
  • 1 teaspoon sugar
  • 90g butter
  • 3 medium eggs, room temperature
  • ½ packet vanilla sugar

For the Cream Filling:

  • 1 litre milk
  • 1 cup powdered sugar (170g)
  • 2 eggs
  • 1 cup cornstarch (100g)
  • 2 heaping tablespoons flour (45g)
  • 1 packet vanilla
  • 125g margarine or butter

Optional: Reduce sugar slightly and add 100g white chocolate with the butter for an extra rich flavor.

Instructions:

  1. For the crispy layer, mix butter, sugar, and flour to form a dough. Roll between two sheets of parchment and freeze.
  2. For the choux pastry, boil water, salt, sugar, and butter. Add flour and cook for 3-4 minutes. Turn off heat, add vanilla, and let it cool. Gradually add eggs, mixing well after each addition (the dough should form a ‘V’ shape when lifted).
  3. Pipe the dough onto a baking sheet. Cut out rounds from the frozen crispy layer and place on top of each dough mound. Bake at 180°C for 30-35 minutes until golden (adjust time based on size). Leave in the closed oven for 10 more minutes after turning off the heat.
  4. For the cream, whisk sugar, eggs, cornstarch, and flour in a pot. Gradually add milk, stirring to a smooth consistency. Cook over medium heat until thick, then remove from heat and add butter and vanilla. Cover with cling film touching the surface and let cool. Refrigerate until ready to use. Whip before using.
