Crust:

  • 150 g of digestive biscuits, crushed
  • 75 g of melted butter
  • 1 tsp of mixed spice (alternative to Weihnachtsaroma)

  • 600 g of cream cheese
  • 3 eggs
  • 200 ml of heavy cream
  • 200 g of sugar
  • 45 g of cornstarch
  • 1 tsp of mixed spice
  • 1 packet of vanilla sugar

Cinnamon Filling:

  • 80 g of butter, melted
  • 100 g of brown sugar
  • 1 tbsp of cinnamon
  • 1 tsp of cornstarch

Cream Cheese Topping:

  • 150 g of cream cheese
  • 70 g of powdered sugar
  • 1 tsp of lemon juice

Instructions:

  1. Line a 24 cm springform pan with parchment paper.
  2. Mix crushed biscuits, melted butter, and mixed spice. Press into the pan to form a base. Chill for 20 minutes.
  3. For the filling, mix cream cheese, sugar, vanilla sugar, and mixed spice. Add cornstarch and heavy cream; mix well. Finally, incorporate the eggs one by one. Pour this mixture into the springform pan.
  4. Wrap the pan edges with aluminum foil (double layer). For the cinnamon filling, mix melted butter, cinnamon, cornstarch, and brown sugar. Spread this over the cream cheese filling.
  5. Bake in a preheated oven at 160°C (320°F) for 60 minutes. Place a water-filled ovenproof dish in the oven (preferably on the bottom rack). After baking, turn off the oven and slightly open the door, using a wooden spoon to keep it ajar. Leave the cheesecake in for another 20 minutes.
  6. Remove and let it cool to room temperature. If there’s any butter on the surface, gently dab it off with a paper towel. Chill for 6-8 hours or overnight.
  7. Before serving, mix cream cheese, lemon juice, and powdered sugar until smooth. Spread over the cheesecake or drizzle after slicing.
