This beloved dessert invites you into a world where every forkful is drenched in a harmonious blend of milks, creating a symphony of creamy sweetness in your mouth, crowned by a silky whisper of whipped cream.

Ingredients

For the Airy Sponge:

  • 6 eggs, with yolks and whites separated
  • 200 grams of caster sugar
  • 200 grams of plain flour, for a tender crumb
  • 1 teaspoon of baking powder
  • A pinch of salt, just a whisper
  • 1 teaspoon of the finest vanilla extract

Milky Bath:

  • 1 can of sweetened condensed milk (354 ml)
  • 1 can of evaporated milk (410 ml), with a gentle 7.5% fat
  • 240 ml of whole milk, as fresh as the morning
  • 1 teaspoon of vanilla extract, for an aromatic embrace

Whipped Cream Cloud:

  • 475 ml of heavy cream, ready to whip into soft peaks
  • 25 grams of sugar, to sweeten the cloud

Preparation

  1. Preheat your oven to a gentle 175°C (347°F) and prepare a 20x30 cm pan, lining it with parchment as if tucking it into bed.
  2. Whisk the egg yolks with 150 grams of sugar until they're pale and thick, like a ribbon. Whisper in the vanilla extract.
  3. In a separate, clean bowl, whip the egg whites with a pinch of salt until mountains form. Snow in the remaining 50 grams of sugar until the peaks glisten like a winter morning.
  4. Sift together the flour and baking powder, and marry them with the egg mixtures. Start with the flour, end with the flour, folding gently to keep the air in.
  5. Pour the love and batter into the pan, and bake for a golden 25 minutes or until it springs back at a gentle touch.
  6. While the cake dreams in the oven, whisk together the three milks and a teaspoon of vanilla, creating a potion that will transform the sponge into a moist wonder.
  7. Once the cake has cooled, prick it with a fork, like a secret message, then bathe it in the milky mixture. Let it chill in the refrigerator, soaking for 3 hours.
  8. Whip the heavy cream and sugar until it's like soft clouds at sunrise. Spread it over the cake like a blanket.
  9. Garnish with a choice of berries, nuts, or a sprinkle of cinnamon. Each adds a whisper of its essence to the cake.

Serve this slice of heaven and watch as it becomes a celebration, a moment of joy on the tongue.
