Ingredients:

350 g cinnamon-flavored cookies, crushed
150 g butter, melted

55 g butter, melted
50 g flour
50 g soft brown sugar
20 g rolled oats

3 tart apples, thinly sliced
50 g soft brown sugar
1 tsp ground cinnamon
2 tsp cornstarch
For the Creamy Cheesecake Filling:

690 g cream cheese, softened
75 g white sugar
100 g plain Greek yogurt
2 tsp vanilla essence
½ tsp cinnamon
¼ tsp ginger powder
¼ tsp nutmeg
3 large eggs, room temperature
Instructions:

Prepare the Base: Mix crushed cookies with melted butter. Press firmly into a lined 9-inch springform pan. Chill.

Make the Crumble: Combine melted butter, flour, sugar, and oats. Cool until crumbly.

Apple Layer: Cook apple slices with sugar, cinnamon, and cornstarch until softened. Cool.

Cheesecake Filling: Preheat oven to 325°F. Blend cream cheese, sugar, yogurt, vanilla, spices, and eggs until smooth.

Assemble: Pour the cheesecake mixture over the chilled base. Add apple layer. Sprinkle with oat crumble.

Bake: Place on the middle rack with a tray below for 65-70 minutes until slightly jiggly.
