  • 80g white chocolate (dairy-free)
  • 80g dairy-free butter
  • 1 cup coconut sugar
  • 100g plant-based yogurt
  • 1 1/2 cups self-raising flour
  • 1 tsp bicarbonate of soda
  • 1/2 cup vegan vanilla protein powder
  • 1 cup dairy-free milk
  • 1/2 cup white chocolate chunks or chips (dairy-free)
  • Zest from one lemon (optional)

Method:

  1. Preheat the oven to 180°C and line a square baking tray with baking paper.
  2. Melt the white chocolate with the dairy-free butter.
  3. Rub the lemon zest into the coconut sugar, then dissolve it in the butter-chocolate mixture.
  4. Add in the dairy-free milk and yogurt, stirring until smooth.
  5. Sift in the dry ingredients and mix until smooth and glossy. Adjust the consistency if necessary (the mixture should be thick but pourable).
