Ingredients for Dough:
- 2 cups plus 6 tablespoons all-purpose flour (300g)
- 3/4 cup plus 2 tablespoons warm milk
- 1 slightly heaping tablespoon sugar
- 4 tablespoons unsalted butter, softened
- 1 teaspoon salt
- 1 3/4 teaspoon instant dry yeast
For Garlic Butter Spread:
- 4 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 1/2 teaspoon garlic powder
- Salt to taste
- 2 tablespoons chives or green onion, finely chopped
- Grated mozzarella cheese, as needed
Preparation Steps:
- In your stand mixer, combine flour, warm milk, sugar, salt, and yeast. Mix until just incorporated.
- Add the softened butter to the mixture and knead on a medium to high setting for 10-15 minutes until the dough is smooth and elastic.
- Cover the dough with a cloth and allow it to rise in a warm place until it has doubled in size.
- For the garlic butter, stir together the softened butter, minced garlic, garlic powder, salt, and chives in a bowl. Set this mixture aside for later.
- After the dough has doubled, turn it out onto a surface and roll it into a large rectangle. Cut the dough into triangles.
- Place a generous amount of mozzarella cheese on the wide end of each triangle.
- Roll up the triangles starting from the cheese-filled end and place them point-side down in a greased baking dish.
- Cover the rolls and let them rise again until they've doubled in size.
- Brush each roll with an egg wash made from one egg yolk beaten with a splash of milk.
- Bake in a preheated oven at 350°F until the rolls are golden brown on top.
- As soon as they come out of the oven, brush the tops generously with the prepared garlic butter.
