Ingredients for the Cake
- 150g butter, at room temperature
- 1 small cup sugar (100 ml)
- 2 large eggs, at room temperature
- 100g ground almonds or finely chopped hazelnuts
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- Pinch of salt
For the Apple Filling
- 1kg apples, peeled and diced
- 2 packets of sugar-free vanilla pudding powder
- 500ml apple juice
- 1 small cup sugar (100 ml)
- Juice of half a lemon
- 1 teaspoon cinnamon
For the Cream Topping
- 200ml cream
- 1 packet cream stabilizer
- 2 tablespoons sugar
- 2 tablespoons cream cheese or 1 packet of sour cream
- Cinnamon for dusting
Instructions:
- Prepare the Cake:
In a large bowl, cream together the butter and sugar for 6-7 minutes until light and fluffy. Add the eggs one at a time, beating well after each addition. - In a separate bowl, mix the ground almonds, flour, baking powder, cinnamon, and salt. Gradually add this to the butter mixture and beat until well combined.
- Pour the batter into a greased and lined 22-24cm cake pan, spreading it evenly. Bake in a preheated oven at 170°C for about 20 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
- Prepare the Apple Filling:
Peel and dice the apples into small cubes. Squeeze the lemon juice over the apples and mix well to prevent browning. In a large pot, add the apples, sugar, cinnamon, and 400ml of the apple juice. Bring the mixture to a simmer and cook until the apples soften slightly. - In a separate bowl, mix the remaining 100ml of apple juice with the pudding powder. Add this mixture to the apples and stir constantly until it thickens. Cook for another 1-2 minutes, then remove from heat and let it cool slightly.
- Spread the apple pudding mixture over the cooled cake base. Let it cool completely before adding the cream topping.
- Prepare the Cream Topping:
In a medium bowl, whip the cream with the cream stabilizer and sugar until stiff peaks form. Gently fold in the cream cheese or sour cream until smooth. - Spread the cream mixture evenly over the cooled apple layer. Chill the cake for at least a few hours, or overnight, to allow the flavors to develop.
- Before serving, dust the top of the cake with cinnamon for a beautiful finish. Slice and serve.
Enjoy!
