For the Hazelnut Biscuit:

  • Hazelnut Powder: 340g
  • Flour: 40g
  • Egg Whites: 9
  • Sugar: 220g
  • Salt: A pinch

Sift all the dry ingredients together. Whip the egg whites to soft peaks, gradually adding sugar to form a stiff meringue. Gently fold in the dry ingredients. Divide into four parts and bake each in a 20cm pan at 180°C (356°F) for about 15 minutes. Cool the biscuits aside.

  • Flour: 75g
  • Cornstarch: 60g
  • Egg Yolks: 9
  • Milk: 750g
  • Butter: 175g
  • Hazelnut Praline: 150g

Heat the milk in a saucepan. Whisk egg yolks, sugar, cocoa, flour, and cornstarch in a bowl. Gradually add half of the hot milk, then return the mixture to the saucepan. Whisk until it thickens into a pastry cream. Add butter and mix well. Cover with plastic wrap touching the surface and chill. Once cooled, blend with hazelnut praline until smooth and creamy.
