Ingredients

  • 110g unsalted butter, melted
  • 150g light brown sugar
  • 115g granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 225g plain flour
  • 1/2 tsp bicarbonate of soda (baking soda)
  • 1/2 tsp salt
  • 100g Kinder chocolate, chopped into small pieces
  • 100g white chocolate chips

Instructions

  1. Preheat your oven to 180°C (160°C fan) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the melted butter, light brown sugar, and granulated sugar until well blended.
  3. Beat in the egg and vanilla extract until the mixture is smooth.
  4. Sift in the plain flour, bicarbonate of soda, and salt, and fold the dry ingredients into the wet mixture until just combined.
  5. Stir in the chopped Kinder chocolate and white chocolate chips until they are evenly distributed throughout the dough.
  6. Scoop small portions of the dough onto the prepared baking sheet, spacing them apart to allow for spreading.
  7. Bake in the preheated oven for approximately 5 minutes. The cookies should still look slightly underdone when they're removed from the oven; this is key to ensuring they stay soft as they cool.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

These mini cookies are the perfect bite-sized treat for any chocolate lover. With their soft texture and rich flavor, they're sure to be a hit for any occasion or simply as a quick treat to enjoy any time of the day. Remember, the secret to their softness is in the short baking time – so keep an eye on the clock and enjoy your cookies soft and warm!
