Moist Banana Bread

Delight in this Super Moist Banana Bread that’s full of flavor and boasts a soft texture with a deliciously caramelized crust. It’s an easy-to-make treat that’s perfect for any banana bread lover.


  • 115g unsalted butter, melted
  • 100g granulated sugar
  • 100g light brown sugar
  • 2 medium eggs, room temperature
  • 125ml whole or semi-skimmed milk, room temperature
  • 1 tsp vanilla extract
  • 180g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon (optional but recommended)
  • 1/4 tsp salt
  • 3 ripe large bananas, mashed


  1. Preheat your oven to 180°C (160°C fan) and grease a loaf tin, lining it with parchment paper if desired.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and light brown sugar until well combined.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract until the mixture is homogenous.
  5. In a separate bowl, sift together the plain flour, bicarbonate of soda, cinnamon, and salt.
  6. Gradically mix the dry ingredients into the wet ingredients, stirring until just combined.
  7. Fold in the mashed bananas, making sure not to overmix.
  8. Pour the batter into the prepared loaf tin and smooth the top.
  9. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Be careful not to overbake, as the banana bread will continue to cook slightly as it cools in the tin.
  10. Let the banana bread cool in the tin for a while before transferring it to a wire rack to cool completely.
