Genoise Sponge

  • 4 eggs
  • 120 g sugar
  • 60 g flour
  • 60 g cornstarch (Maizena)

Vanilla Diplomat Cream

  • 400 ml semi-skimmed milk
  • 3 egg yolks
  • 40 g cornstarch
  • 90 g sugar
  • 3 gelatin sheets (6 g)
  • 30 g butter
  • 1 vanilla pod
  • 250 ml heavy cream
  • 3 tbsp powdered sugar
  • 120 g mascarpone
  • Plus 1 mango and about 6 or 7 kiwis for fruit layers

Vanilla Syrup

  • 80 g sugar
  • 100 ml water
  • ½ vanilla pod or ½ tsp vanilla extract

Instructions

  1. Genoise Sponge: Whisk eggs and sugar until light. Gently fold in sifted flour and cornstarch. Bake until golden.
  2. Diplomat Cream: Infuse milk with vanilla. Whisk egg yolks, sugar, and cornstarch. Add to milk; cook until thickened. Stir in soaked gelatin and butter. Once cool, fold in whipped cream and mascarpone.
  3. Assembly: Slice genoise, soak with vanilla syrup. Layer with diplomat cream and alternate with mango and kiwi slices.
  4. Top: Finish with a layer of mango jelly and decorate with kiwi and mango spheres.
  5. Chill & Serve: Refrigerate to set before serving.
