Ingredients: Sponge:

  • 5 eggs (room temperature)
  • 1 tsp lemon juice
  • ¼ cup vegetable oil
  • ¼ cup hot water
  • 1 leveled tbsp instant coffee (Nescafe)
  • 1 cup flour (115g)
  • 1 cup sugar (170g)
  • 2 tbsp cornstarch (25g)
  • 1 packet baking powder
  • 1 packet vanilla

Cream:

  • 500ml milk
  • ½ cup sugar (85g)
  • 1 egg
  • ½ cup cornstarch
  • 1 heaping tbsp flour
  • 1 packet vanilla
  • 1 tsp butter
  • 1.5 tsp instant coffee
  • ½ packet liquid cream

Topping:

  • 150ml cream
  • 200g white chocolate

Syrup:

  • 1.5 cups hot water
  • 1 heaping tbsp instant coffee
  • 1 tsp sugar

Decoration:

  • 25ml cream
  • 40g dark chocolate
  • Hazelnuts (optional)

Instructions:

  1. For the sponge, separate egg whites and yolks. Beat whites with lemon juice and half of the sugar until stiff. Beat yolks with the rest of the sugar, then add coffee dissolved in hot water. Mix dry ingredients and combine with yolks, then fold in whites. Bake in a preheated oven at 175°C in a 20-21 cm pan until done.
  2. For the cream, cook sugar, egg, cornstarch, flour, and milk until thick. Add butter, coffee, and vanilla, then chill. Whip with cold cream before using.
  3. For the topping, melt white chocolate in cream.
  4. Soak the sponge with a coffee syrup made from hot water, coffee, and sugar.
  5. Assemble the cake with layers of sponge and cream. Top with the white chocolate mixture.
  6. Decorate with melted dark chocolate and hazelnuts.
