- 2 tablespoons (25g) granulated sugar
- 1 teaspoon (5ml) lemon juice
- 1 teaspoon (3g) cornstarch
For the Cookie Dough:
- ½ cup (113g) unsalted butter, at room temperature
- ½ cup (110g) light brown sugar, packed
- ¼ cup (50g) granulated sugar
- 2 teaspoons freshly grated lemon zest
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1 ⅓ cups (190g) all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ¾ cup (113g) white chocolate chunks
- ½ cup (120ml) blueberry swirl mixture
Instructions
- For the blueberry mixture, cook blueberries and sugar over medium heat, stirring until reduced by half. Add lemon juice and a slurry made from the blueberry juices and cornstarch. Boil for 10 seconds, cool, then chill in the refrigerator.
- To make the cookie dough, beat butter, both sugars, lemon zest, and vanilla until fluffy. Mix in the egg.
- Whisk together flour, baking soda, baking powder, and salt. Gradually add to the butter mixture, then fold in the white chocolate chunks.
- Divide the dough in half, and dollop ¼ cup of blueberry mixture into each portion, swirling gently to create a marbled effect.
- Chill the dough as you preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop mounds of dough onto the prepared sheets. Optionally, press extra white chocolate chunks on top.
- Bake for 14-16 minutes until browned at the edges. Cool on the sheets briefly before transferring to a wire rack.
