- Dough:
- 1 cup plant-based milk, warm
- ¼ cup granulated sugar
- 2 ¼ tsp active dry yeast
- 3 cups all-purpose flour
- 1/2 tsp salt
- 3 tbsp vegan butter, melted
- 3 tbsp poppyseeds
- Lemon Filling:
- ½ cup plant-based butter, softened
- ½ cup granulated sugar
- Zest and juice of one lemon
- Lemon Cream Cheese Frosting:
- ¼ cup dairy-free butter, softened
- 1 cup dairy-free cream cheese, cold
- ¾ cup powdered sugar
- Zest and juice of one lemon
Method:
- Combine dough ingredients in a stand mixer until it forms a non-sticky dough.
- Cover with a damp cloth and let it rise in a warm place for about 1 1/2 hours, until doubled.
- Once risen, roll out the dough on a floured surface into a rectangle.
- Mix filling ingredients and spread evenly over the dough.
- Roll the dough lengthwise and slice into 9 thick rolls.
- Place in a baking dish, cover with a cloth, and let rise again for 20-30 minutes.
- Preheat the oven to 180°C during the second rise.
- Bake the rolls for 20-22 minutes until golden.
- Prepare the frosting by mixing all ingredients and spread over warm rolls.
