Luscious Lemon Poppyseed Sweet Rolls with Creamy Lemon Frosting

Ingredients:

  • Dough:
    • 1 cup plant-based milk, warm
    • ¼ cup granulated sugar
    • 2 ¼ tsp active dry yeast
    • 3 cups all-purpose flour
    • 1/2 tsp salt
    • 3 tbsp vegan butter, melted
    • 3 tbsp poppyseeds
  • Lemon Filling:
    • ½ cup plant-based butter, softened
    • ½ cup granulated sugar
    • Zest and juice of one lemon
  • Lemon Cream Cheese Frosting:
    • ¼ cup dairy-free butter, softened
    • 1 cup dairy-free cream cheese, cold
    • ¾ cup powdered sugar
    • Zest and juice of one lemon

Method:

  1. Combine dough ingredients in a stand mixer until it forms a non-sticky dough.
  2. Cover with a damp cloth and let it rise in a warm place for about 1 1/2 hours, until doubled.
  3. Once risen, roll out the dough on a floured surface into a rectangle.
  4. Mix filling ingredients and spread evenly over the dough.
  5. Roll the dough lengthwise and slice into 9 thick rolls.
  6. Place in a baking dish, cover with a cloth, and let rise again for 20-30 minutes.
  7. Preheat the oven to 180°C during the second rise.
  8. Bake the rolls for 20-22 minutes until golden.
  9. Prepare the frosting by mixing all ingredients and spread over warm rolls.
