Luscious Vanilla Custard Layered Cake

This delectable treat boasts layers of soft vanilla cake surrounding a velvety vanilla custard center. Prepare it a day or two in advance to let the flavors meld beautifully!

Vanilla Sponge Ingredients:

  • 150ml Milk (either Unsweetened almond milk or your preferred type)
  • 15ml White Vinegar
  • 150g Granulated Sugar
  • 1 tsp Vanilla Extract
  • 80ml Neutral Oil
  • 140g All-Purpose Flour
  • 10g Corn Starch
  • 1/8 tsp Baking Soda
  • 1 tsp Baking Powder
  • A hint of Salt

Directions:

  1. Kick off by preheating your oven to 350°F. Prep a 6-inch round springform pan with parchment paper.
  2. Mix milk and vinegar in a bowl and let it rest for 5 minutes. Following that, infuse the mixture with oil, vanilla extract, and sugar. Whisk until the sugar integrates fully.
  3. Separately, blend all the dry components. Gradually incorporate this mixture into the wet blend.
  4. Transfer your batter into the cake pan and bake for about 25-30 minutes. Check for firmness. Post baking, allow it to settle at room temperature for an hour, then refrigerate for an additional 30 minutes. This makes slicing easier. Split the cake into two even layers with a serrated knife, and set one layer back in the springform base.

Rich Vanilla Custard Filling Ingredients:

  • 300ml Milk (your choice, unsweetened almond milk works well)
  • 90g Granulated Sugar
  • 30g Corn Starch
  • 40g Butter (either non-dairy or your preferred butter)
  • 1 tsp Vanilla Essence or Vanilla Bean Powder
  • A sprinkle of Salt
  • A touch of Turmeric Powder (optional for a hint of color)

Directions:

  1. Initiate by gently warming the milk in a pot. As it nears boiling, in a different bowl, amalgamate sugar and corn starch.
  2. Introduce this sugary blend to the bubbling milk, stirring steadily on a medium flame until it begins to thicken. Persist in stirring as it boils for another minute.
  3. Off the heat, fold in butter, vanilla, salt, and turmeric until you achieve a glossy, smooth texture. Allow the custard to cool until it's just warm, stirring occasionally.
  4. Pour this creamy custard over the first layer of cake. Crown it with the second cake slice. Swaddle your cake with cling film and let it luxuriate in the fridge overnight.
