Ingredients:
Cake Mix:
- Eggs: 4
- Corn oil: 40g
- Milk: 43g
- Low gluten flour: 40g
- Matcha Powder: 8g
- A squeeze of Lemon Juice
- Sugar: 40g
Filling:
- Light cream: 400g
- Pineapple jam: 40g
- Sugar: 20g
- Dole Pineapple cups: As needed

- Small square mold
Instructions:
Cake Mix:
- Separate egg whites and yolks. Place egg whites in the freezer for 10 minutes.
- In a mixing bowl, combine corn oil and milk. Sift in matcha powder and low gluten flour. Mix well.
- Introduce egg yolks to the mixture and stir until combined.
- Retrieve egg whites from the freezer. Add a few squeezes of lemon juice and whisk until it begins to thicken. Gradually incorporate sugar in three batches, continuing to whisk until you achieve a firm meringue consistency (the egg whites should form a curly tip when you lift the whisk).
- Gently fold a portion of the meringue into the batter. Once combined, fold in the rest of the meringue.
- Prepare the baking pan with baking paper and pour in the batter.
- Preheat the oven to 150°C (300°F) and bake for 30 minutes or until a toothpick inserted comes out clean.
For the Filling:
- In a bowl, combine sugar, whipping cream, and pineapple jam. Whisk until it reaches a yogurt-like consistency.
