Matcha Pineapple Delight Cake Recipe

Experience the fresh fusion of earthy matcha with the tropical tang of pineapple in this delicate cake. Whether you’re celebrating a special occasion or just indulging in a mid-week treat, this cake is sure to delight.

Ingredients:

Cake Mix:

  • Eggs: 4
  • Corn oil: 40g
  • Milk: 43g
  • Low gluten flour: 40g
  • Matcha Powder: 8g
  • A squeeze of Lemon Juice
  • Sugar: 40g

Filling:

  • Light cream: 400g
  • Pineapple jam: 40g
  • Sugar: 20g
  • Dole Pineapple cups: As needed

Materials:

  • 28 inch x 28 inch baking pan
  • Small square mold

Instructions:

Cake Mix:

  1. Separate egg whites and yolks. Place egg whites in the freezer for 10 minutes.
  2. In a mixing bowl, combine corn oil and milk. Sift in matcha powder and low gluten flour. Mix well.
  3. Introduce egg yolks to the mixture and stir until combined.
  4. Retrieve egg whites from the freezer. Add a few squeezes of lemon juice and whisk until it begins to thicken. Gradually incorporate sugar in three batches, continuing to whisk until you achieve a firm meringue consistency (the egg whites should form a curly tip when you lift the whisk).
  5. Gently fold a portion of the meringue into the batter. Once combined, fold in the rest of the meringue.
  6. Prepare the baking pan with baking paper and pour in the batter.
  7. Preheat the oven to 150°C (300°F) and bake for 30 minutes or until a toothpick inserted comes out clean.

For the Filling:

  1. In a bowl, combine sugar, whipping cream, and pineapple jam. Whisk until it reaches a yogurt-like consistency.
  2. Transfer the cream to a piping bag for easy assembly.

Assembly:

  1. Using the small square mold, cut out four squares from the baked cake.
  2. Begin layering: Pipe or spread cream on one square, add a couple of spoons of pineapples, then more cream. Place another cake square on top and repeat until all layers are assembled.
  3. Coat the entire cake with the remaining cream, ensuring a smooth finish.
  4. Decorate with more pineapples and a sprinkling of coconut shreds for a tropical finish.
