Ingredients for 4 Mini Loaves (10cm x 5cm) or 1 Large Loaf (27cm x 15cm):

  • 2 eggs
  • 200 ml of processed mandarins (about 2 to 3 mandarins), peeled and seedless
  • 180 g of brown sugar or mascavo sugar
  • 120 ml of vegetable oil
  • 1 tablespoon of baking powder
  • 200 g of ultra-fine flour
  • 100 g of whole wheat flour

For the Syrup:

  • 200 ml of mandarin juice
  • 100 g of brown sugar or mascavo sugar

Instructions:

  1. Preheat the oven to 170°C (338°F). Grease and flour the loaf pans.
  2. Blend the mandarins until smooth. Mix in the sugar, then incorporate the eggs.
  3. Combine the ultra-fine flour and baking powder, then add to the mixture along with the whole wheat flour, stirring until well mixed.
  4. Pour the batter into the prepared molds and bake for 20 minutes, or until a skewer inserted comes out clean.
  5. For the syrup: In a saucepan, combine mandarin juice and sugar, and cook for 7 minutes.
  6. As soon as the loaves come out of the oven, drench them with the syrup.
  7. Allow to cool completely before demolding.
