- 2 (8.8 oz) packages Biscoff cookies
- 140 grams (10 tbsp) unsalted butter, melted
- 400 grams (14.1 oz) Biscoff cookie butter, for melting and frosting
Instructions:
- Begin by lining the bottom of an 8.5-inch springform pan with parchment paper and set it aside.
- For the filling, beat together the cream cheese, granulated sugar, and cookie butter in a mixing bowl until well combined.
- In a separate bowl, whip 1 1/2 cups of the heavy cream until soft peaks form using a hand mixer or stand mixer.
- Gently fold the whipped cream into the cream cheese mixture until smooth and place it in the refrigerator while preparing the crust.
