No-Bake Biscoff Cheesecake

Ingredients:

For the Biscoff Cheesecake Filling:

  • 2 (8 oz) packages of cream cheese, at room temperature
  • 50 grams (1/4 cup) granulated sugar
  • 400 grams (14.1 oz) Biscoff cookie butter
  • 475 ml (2 cups) heavy cream, divided

For the Biscoff Crust & Topping:

  • 2 (8.8 oz) packages Biscoff cookies
  • 140 grams (10 tbsp) unsalted butter, melted
  • 400 grams (14.1 oz) Biscoff cookie butter, for melting and frosting

Instructions:

  1. Begin by lining the bottom of an 8.5-inch springform pan with parchment paper and set it aside.
  2. For the filling, beat together the cream cheese, granulated sugar, and cookie butter in a mixing bowl until well combined.
  3. In a separate bowl, whip 1 1/2 cups of the heavy cream until soft peaks form using a hand mixer or stand mixer.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth and place it in the refrigerator while preparing the crust.
  5. For the crust, crush 1 1/2 packages of Biscoff cookies to fine crumbs. Combine with the melted butter and press the mixture into the bottom of the springform pan to create an even layer.
  6. Pour the cheesecake filling over the crust and smooth the top. Refrigerate for at least 6 hours to set.
  7. For the topping, beat the remaining 1/2 cup of heavy cream with 1/2 cup of Biscoff cookie butter until fluffy, creating a frosting. Refrigerate this as well until ready to pipe.
  8. After the cheesecake has set, melt the remaining Biscoff cookie butter in a microwave-safe bowl for about 20 seconds, until pourable.
  9. Pour the melted cookie butter over the center of the cheesecake. Pipe the prepared frosting around the edges of the cheesecake.
  10. Crush the remaining cookies and sprinkle them over the top for added texture and flavor.
