Ingredients: Yield: One 8-inch cheesecake

Cheesecake Crust:

  • 15-16 Golden Oreos, finely crushed
  • 1 tbsp Granulated Sugar
  • 90g Butter, melted (vegan butter is fine too)

Strawberry Crunch Layer:

  • Reserved 1/4 cup of Oreo crumbs from the crust
  • 3-4 tbsp crushed freeze-dried or dehydrated strawberries

Creamy Strawberry Cheesecake Filling:

  • 650g Cream Cheese, softened (vegan or regular)
  • 65g Sour Cream
  • 100g Granulated Sugar
  • 3 tsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 300ml Whipping Cream (dairy-free or regular), whipped to medium peaks
  • 60g Powdered Sugar (to mix with whipped cream)
  • 3-4 tbsp freeze-dried strawberries, powdered

Steps:

  1. Prepping the Pan: Line an 8-inch springform pan with baking paper.
  2. Crust Creation: In a bowl, combine the crushed golden Oreos, sugar, and melted butter. Once mixed to a wet sand consistency, press firmly onto the base and slightly up the sides of the prepared pan. Refrigerate for 30 minutes to set.
  3. Cheesecake Filling: Using a stand mixer, blend together the cream cheese, sour cream, and granulated sugar until smooth and lump-free, approximately 3-4 minutes. Incorporate the lemon juice and vanilla extract. Gently fold in the whipped cream (mixed with powdered sugar) until well combined.
  4. Layering the Fillings: Divide the cream cheese mixture equally. To one-half, add the powdered freeze-dried strawberries and fold gently. Pour the strawberry cream cheese layer onto the set crust. Follow this by gently layering on the vanilla cream cheese mixture.
  5. Setting the Cheesecake: Wrap the pan with plastic wrap and allow it to chill in the refrigerator for a minimum of 12 hours.
  6. Final Presentation: Use an offset spatula to gently release the cheesecake from the sides of the springform pan. Transfer the cheesecake to a serving plate. Before serving, sprinkle the strawberry crunch layer on top.
