No-Bake Vegan Cookie Dough Cheesecake

Treat yourself to this dreamy No-Bake Vegan Cookie Dough Cheesecake, packed with the rich flavors of cashew butter and the sweetness of maple syrup, dotted with chocolate chips for a decadent dessert experience.

Ingredients:

Cookie Dough Base:

  • 3.09 cups (250g) rolled oats
  • ¾ cup (200g) cashew butter
  • ⅔ cup (150ml) pure maple syrup
  • 2 tbsp (30ml) non-dairy milk, more if needed
  • 1 tsp sea salt
  • 1 tbsp vanilla bean paste
  • ½ cup (100g) vegan chocolate chips

Cheesecake Filling:

  • 1 ½ cup (200g) cashews, pre-soaked
  • 1 ⅓ cups (300g) vegan cream cheese
  • ⅔ cup (150g) vegan Greek-style yogurt or Skyr
  • ¼ cup (80g) pure maple syrup
  • ¼ cup (50g) coconut oil, kept solid
  • 1 tbsp vanilla bean paste
  • 2 tbsp lemon juice
  • ⅓ cup (50g) vegan chocolate chips

Instructions:

  1. Line a 9” rectangular pan with parchment paper. A round pan of 7” or 8” will also work.
  2. Process the rolled oats in a food processor until they reach a flour-like consistency.
  3. Add the cashew butter, maple syrup, non-dairy milk, sea salt, and vanilla into the oat flour and blend until it forms a cohesive dough. If it's too thick, add a bit more milk.
  4. Move the dough to a mixing bowl and gently fold in the chocolate chips.
  5. Separate out ¼ of the dough and roll into small balls. Chill these in the fridge for later.
  6. Press the rest of the dough into the bottom of the prepared pan, creating a smooth, even layer. Chill in the fridge while preparing the filling.
  7. For the cheesecake, blend the cashews, vegan cream cheese, yogurt, maple syrup, coconut oil, vanilla bean paste, and lemon juice until the mixture is smooth.
  8. Pour this creamy mixture over the cookie dough base. Sprinkle the vegan chocolate chips on top and use a spoon or skewer to swirl them into the filling. Place the reserved cookie dough balls on top.
  9. Refrigerate the cheesecake for at least 5-6 hours, or overnight, to set properly.
