Ingredients:

  • 1 1/2 cups Mashed bananas
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 Eggs
  • 150 g Butter, melted
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Kosher salt
  • 2 cups Flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Nutella for each muffin

Instructions:

  1. Preheat your oven to 180°C (350°F) and prepare a muffin pan with paper liners.
  2. In a large mixing bowl, place the ripe bananas and mash them until they reach a pudding-like consistency using a fork or a potato masher.
  3. Add the melted butter, eggs, vegetable oil, vanilla extract, granulated sugar, and salt to the mashed bananas. Mix with a whisk until the mixture is well combined.
  4. Incorporate the flour, baking powder, and baking soda, stirring just until combined. Avoid overmixing the batter to maintain a tender texture.
  5. Use a large ice cream scooper to scoop the batter into the muffin tins.
  6. Add 1/2 teaspoon (or more) of Nutella on top of each banana muffin. Create swirls on the surface using a toothpick or a knife.
  7. Bake in the preheated 180°C (350°F) oven for 18-20 minutes or until a toothpick inserted into a muffin comes out clean. Avoid overbaking to keep the muffins moist. Let the muffins cool for at least 15 minutes before serving.

Notes:

  • Use room temperature ingredients, especially eggs and melted butter. This ensures that the batter mixes uniformly and bakes perfectly. Avoid using cold ingredients.
  • Avoid overmixing the batter to prevent the development of gluten in the flour, which can result in dense and dry muffins. Mix until just combined.
  • Measure the flour correctly by not scooping it with a measuring cup. Instead, stir the flour with a spoon to create air pockets, then spoon it into your measuring cup, and level it with the back of a knife.
  • Use only ripe bananas for this recipe as they are sweeter, moister, and easier to mash into a pudding-like consistency. If your bananas aren't ripe, you can bake them in a preheated 200°C (400°F) oven for 10 minutes to soften and ripen them.
  • Feel free to add your favorite add-ins to make this recipe your own. Options include chocolate chips, chopped nuts, banana slices, or other fruits. Get creative!
  • Be patient; even though it's tempting to eat these muffins right out of the oven, allow them to cool for at least 20 minutes. This will help them firm up and avoid crumbliness. These muffins are extra moist and delicious, so the wait will be worthwhile.
