Peanut Butter Blossom Cookies

Ingredients:

1 3/4 cup (218 g) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (100 g) granulated sugar
1/2 cup (100 g) light brown sugar
1/2 cup (128 g) no-stir creamy peanut butter¹
1/2 cup (113 g or 1 stick) unsalted butter, room temperature
1 large egg, room temperature
1 teaspoon pure vanilla extract
30 Hershey’s Kisses, unwrapped
1/2 cup (100 g) granulated sugar (for rolling)
Instructions:

Preparation: Begin by preheating the oven to 375º F. Prepare your baking sheet by lining it with parchment paper.

Dry Ingredients: In a medium-sized mixing bowl, whisk together the flour, baking soda, and salt. Keep this mixture aside.

Creaming Process: Using a stand mixer with a paddle attachment (or a hand mixer and a sizable bowl), blend together the granulated sugar, brown sugar, butter, and peanut butter. Beat this mixture until it’s smooth and fluffy, which should take approximately 2 minutes. Make sure to scrape down the sides of the bowl if needed. Once mixed, incorporate the egg and vanilla extract and continue beating for about 30 seconds.

Combine Dry and Wet: With the mixer set to low speed, gradually add in the whisked dry ingredients from step 2. Ensure that you mix until the dry ingredients are just incorporated into the wet mixture, avoiding overmixing.²

Forming Cookies: Using a spoon or a cookie scoop, measure out enough dough to form into 1-inch balls. Roll these balls in the extra granulated sugar and position them on the prepared baking sheet, maintaining a distance of 1 1/2 inches between each cookie.

Baking & Finishing Touch: Bake the cookies in the preheated oven for about 10 minutes or until they take on a light golden brown hue. Upon removal from the oven, promptly press an unwrapped Hershey’s Kiss into the center of each cookie. It’s normal for the cookie to exhibit cracks upon pressing the chocolate—this indicates you’re on the right track! Transfer the cookies to a wire cooling rack and let them cool completely before serving.
