Peanut Butter Caramel Cheesecake

Ingredients:

For the Base:

  • 400g biscuits
  • 200g butter, melted

For the Cheesecake:

  • 500g mascarpone
  • 250g cream cheese
  • 100-120g sugar (adjust to taste)
  • 2 whole eggs
  • 1 egg yolk
  • 150g peanut butter

For the Caramel:

  • 200g sugar
  • 130g cream
  • 95g butter
  • 1/2 teaspoon salt

Instructions:

  1. Prepare the Base: Crush the biscuits into fine crumbs, mix with melted butter, then press into the base of an 18cm springform pan lined with parchment paper. Chill in the fridge for at least 20 minutes.
  2. Make the Cheesecake: Combine mascarpone and cream cheese in a large bowl. In another bowl, beat eggs, egg yolk, and sugar together. Mix this into the cheese mixture. Stir in peanut butter, blend well, and pour over the biscuit base. Bake at 160°C in the middle rack for about 60-70 minutes until set but slightly wobbly in the center. Cool completely before removing from the pan.
  3. Create the Caramel: Melt sugar in a high-sided saucepan without stirring, just swirling the pan occasionally. Warm the cream separately. Once sugar is melted, turn off the heat, gradually add cream while stirring; it will bubble. Mix in salt. Finally, add cold butter, stir, cool, then pour over the cheesecake.

Enjoy this Peanut Butter Caramel Cheesecake, a dessert that’s sure to delight anyone with a love for rich, creamy, and nutty flavors, topped with a homemade caramel that’s simply irresistible!
