Pecan Cinnamon Rolls with Cheese Glaze and Caramel

Ingredients:

For the Dough:

  • 500 grams flour
  • 1/2 cup sugar (100 grams)
  • 25 grams fresh yeast / 8 grams dry yeast (1 tablespoon)
  • 1 large egg
  • 100 ml sour cream
  • 3/4 cup milk (160 grams)
  • 100 grams cold butter, cubed
  • 2/3 tablespoon salt (7 grams)

For the Pecan Filling:

  • 200 grams natural pecans
  • 150 grams butter
  • 1.5 tablespoons cinnamon
  • 1 and 1/3 cups brown sugar (270 grams)

For the Cheese Glaze:

  • 100 grams 25-30% fat cream cheese
  • 50 grams soft butter
  • 100 grams powdered sugar

For the Soft Caramel:

  • 150 grams sugar
  • 200 grams 38% fat cream
  • 40 grams soft butter

Instructions:

  1. Dough Preparation:
    • In a mixer with a dough hook, combine milk, sour cream, sugar, egg, yeast, and flour. Mix on low speed for about 5 minutes, then gradually add salt and butter, continuing to knead for an additional 2 minutes.
    • Increase to medium-high speed and knead for about 12 minutes until the dough is smooth. Cover and let it rise until doubled in volume (about 1 hour) or overnight in the fridge.
  2. Pecan Filling:
    • Process pecans, melted butter, cinnamon, and brown sugar in a food processor until well combined.
  3. Rolling the Dough:
    • After rising, divide the dough into two equal parts. Roll out each on a floured surface into a thin rectangle and spread with the pecan filling.
    • Cut into 4 cm wide strips using a pizza cutter and roll into scrolls. Place them spaced apart on a baking tray, cover, and let rise for about 35 minutes.
  4. Cheese Glaze Preparation:
    • Mix soft butter, powdered sugar, and cream cheese until smooth. Store in the fridge.
  5. Caramel Preparation:
    • Warm cream in a small pot until near boiling, set aside.
    • In a wide pan on high heat, caramelize the sugar until amber, reduce heat to medium and carefully add butter, stirring well. Turn the heat back to medium and gradually add cream, stirring continuously until a uniform caramel sauce forms.
  6. Baking:
    • Preheat the oven to 180°C (356°F) on convection mode and bake the cinnamon rolls for about 35 minutes until golden.
    • Cool slightly outside the oven, then glaze with cheese glaze while still warm. Drizzle with caramel and sprinkle with chopped pecans.
