Pumpkin Cinnamon Roll Snack Cake

Ingredients:

For the Cake:

  • 250 grams (2 cups) all-purpose flour
  • 10 grams (2 tsp) baking powder
  • 5 grams (1 tsp) baking soda
  • 9 grams (3 tsp) pumpkin pie spice
  • 2.5 grams (1/2 tsp) salt
  • 300 grams (1 1/2 cups) granulated sugar
  • 1 can (425g, 15-oz) pumpkin puree
  • 4 large eggs
  • 5 ml (1 tsp) vanilla extract
  • 240 ml (1 cup) vegetable oil

For the Brown Sugar Cinnamon Drizzle:

  • 113 grams (8 tbsp) unsalted butter, warmed
  • 100 grams (1/2 cup) brown sugar
  • 15 grams (1 tbsp) cinnamon

For the Frosting:

  • 113 grams (8 tbsp) unsalted butter, softened
  • 360-480 grams (3-4 cups) powdered sugar
  • 5 ml (1 tsp) vanilla extract
  • 10 grams (2 tsp) cinnamon
  • 45 ml (3 tbsp) milk

Directions:

  1. Preheat your oven to 175°C (350°F).
  2. Whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt in a medium bowl and set aside.
  3. In another bowl, mix the granulated sugar with the pumpkin puree, eggs, and vanilla extract. Gradually incorporate the dry ingredients into the wet mixture, then add the vegetable oil and whisk until well combined.
  4. Pour the batter into a greased 9x13-inch baking dish, smoothing it with a spatula.
  5. For the drizzle, warm the butter slightly in the microwave (about 25 seconds), then stir in the brown sugar and cinnamon until it becomes a liquid consistency. Drizzle half over the cake batter and swirl with a knife or chopstick.
  6. Bake the cake for 30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool.
  7. To make the frosting, beat the butter until fluffy, then gradually add the powdered sugar. Mix in the vanilla extract, cinnamon, and milk, and whip until smooth.
