Ingredients

  • 50ml Pumpkin Spice Cold Brew (from Califia Farms)

Pumpkin Cream Topping:

  • 100ml Premium dairy-free whipping cream
  • A hint of orange food color

Directions

  1. Preparing the Crust:
    • Melt dairy-free butter in a pan over low heat. Transfer to a heat-resistant bowl.
    • Process biscuits and mixed spice in a blender until fine. Mix with the melted butter until it forms a sand-like texture that holds when pressed.
    • Firmly press about 1 & 1/2 tablespoons of this mixture into each cookie cup mold. Freeze briefly as you prepare the filling.
  2. Crafting the Cheesecake:
