For the Cupcakes (makes about 12):

  • 160 g cake flour
  • 180 g sugar
  • 68 g 100% cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 175 ml milk
  • 100 g melted butter or 85 ml vegetable oil
  • 180 ml hot coffee
  • A pinch of salt

Cupcake Preparation:

  1. Preheat the oven to 180°C (356°F) and prepare a cupcake tray. The larger the diameter of the cupcakes, the better!
  2. Mix all the dry ingredients, then add the liquids, except the hot coffee. Add the coffee last, after the other ingredients are well combined.
  3. Pour the batter into the cupcake forms and bake for 15 minutes. Be careful not to overbake!
  4. Remove from the oven and let cool completely.

Suggested Frosting: Chocolate and Cream Cheese

  • 200 g cream cheese
  • 150 ml cream
  • 350 g chocolate

Frosting Preparation:

  1. Heat the cream and melt the chocolate in it.
  2. Chill the cream and chocolate mixture completely in the fridge.
  3. In a mixer, blend the cream cheese with the cold cream and chocolate mixture until it forms peaks.

Note: Feel free to use a different frosting of your choice!
