Ingredients

For the Shortcrust Pastry:

  • 200 grams of all-purpose flour
  • 75 grams of granulated sugar
  • 1 large egg
  • 75 grams of cold unsalted butter, diced
  • 1 teaspoon of baking powder

For the Tangerine Filling:

  • 500 grams of quark or cream cheese, low-fat and well-drained
  • 2 large eggs
  • 140 grams of granulated sugar
  • 37 grams of cornstarch
  • 100 grams of sour cream, 10% fat content
  • 70 milliliters of heavy cream, 32% fat content
  • 70 milliliters of sunflower oil
  • 175 grams of canned tangerines, well-drained and dried

For the Clear Tangerine Glaze:

  • 200 milliliters of liquid (use the juice from the canned tangerines, top up with water if needed)
  • 2 tablespoons of cornstarch
  • 1 tablespoon of granulated sugar

Instructions

Preparing the Shortcrust Pastry:

  1. Preheat your oven to 170°C (338°F) and grease a 26 cm diameter springform pan.
  2. In a mixing bowl, combine flour, sugar, and baking powder. Knead in the egg and butter until a cohesive dough forms. Chill for 1 hour.
  3. Roll out two-thirds of the dough to form the base and use the remaining third to create a rim about 3.5 cm high.

Making the Tangerine Filling:

  1. In a bowl, hand-mix the quark or cream cheese with eggs and sugar until smooth.
  2. In a separate container, blend the cornstarch, oil, sour cream, and cream. Combine with the quark mixture, folding gently.
  3. Spread the filling over the crust and distribute the tangerine pieces evenly on top.
  4. Bake for approximately 50 minutes until the filling sets and the edges turn golden. Cool the cake completely after baking.

Creating the Clear Glaze:

  1. Combine the tangerine liquid, cornstarch, and sugar in a saucepan. Cook, stirring, until the mixture thickens and clears. Allow it to cool slightly.
  2. Once cooled, pour the glaze over the cheesecake, creating a glossy finish.
  3. Chill the completed cheesecake until ready to serve, allowing the glaze to set and the flavors to meld.

Optional: Substitute with a ready-made glaze if desired, and feel free to omit the glaze for a simpler version.
