For the Base (makes 2 oven tray quantities):

  • 8 eggs
  • 1½ cups sugar (300g)
  • 1½ cups flour (195g)

  • 2 tsp baking powder

  • 2 tbsp vanilla pudding mix

Instructions:

  1. Base Preparation: Grease two oven trays and line with baking paper. In a mixer, whip eggs with a pinch of salt, gradually adding sugar, for about 10 minutes until fluffy. Sift in flour, baking powder, and cocoa, gently folding to form a smooth batter. Spread half the batter in each tray, smooth with a spoon, and bake in a preheated oven at 180°C for about 12 minutes each, until slightly firm and soft to touch. Let cool, peel off the paper, and cut each base into two equal strips.
  2. Cream Preparation: Whip cream and sugar in a mixer, add pudding mix until well combined, then fold in crushed Oreo cookies.
  3. Assembly: Spread cream evenly on each strip. Start rolling one strip into a cylinder, attaching another strip where the first ends, and continue rolling. Place the rolled cake on a serving plate.
