The Recipe

Nut-Cinnamon Base

  • Springform pan size 26 or 28 cm
  • 3 eggs
  • 120 g (1/2 cup + 1 tbsp) sugar
  • 1 packet (2 tsp) vanilla sugar
  • 2 tbsp oil
  • 100 g (1 cup) ground hazelnuts
  • 100 g (3/4 cup) flour
  • 2 tbsp cornstarch
  • 1/2 tsp baking powder
  • A pinch of cinnamon, or to taste

Additional

  • Plum jam or other jam for spreading
  • Sliced hazelnuts for decoration

Whipped Cream Topping

  • 300 ml (1 1/4 cups) heavy cream
  • 100 ml (1/3 cup + 1 tbsp) milk
  • 1 packet “Paradiescreme” White Chocolate (or similar instant dessert cream mix)
  • 1 packet (2 tsp) vanilla sugar
  • 3 packets cream stabilizer
  • 2 tbsp sugar
  • 2 tbsp sour cream
  1. For the base, beat eggs with sugar and vanilla sugar until fluffy. Add oil. Mix flour, cornstarch, baking powder, and cinnamon, then fold in with the ground hazelnuts. Pour the batter into a springform pan lined with parchment paper and bake at 180°C (356°F) for about 20 minutes. Let it cool.
  2. Spread plum jam over the cooled cake.
  3. For the topping, whip the cream, milk, dessert cream mix, vanilla sugar, sugar, and cream stabilizer until stiff. Fold in the sour cream and spread smoothly over the base.
  4. Sprinkle with sliced hazelnuts. Let it set in the fridge overnight.
