S'mores Cookie Bars

Imagine the delight of a s'more but in the convenient form of a bar. These s'mores cookie bars encapsulate the traditional charm of a s'more but can be enjoyed anytime, anywhere. With a graham cracker-infused dough, layered chocolate, and fluffy marshmallow creme, these are sure to be a hit.

Ingredients:

  • 1 1/4 cup (156 g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup (113 g or 1 stick) unsalted butter, room temperature
  • 1/2 cup (100 g) light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla
  • 6 graham cracker sheets (93 g), crushed into crumbs
  • 2 (4.4 oz) milk chocolate XL Hershey Bars
  • 1 jar (7 oz) marshmallow creme

Instructions:

  1. Preparation: Preheat your oven to 350° F. For ease of removal, line an 8x8-inch baking pan with parchment paper, letting some overhang on the sides.

Graham Cracker Dough Base:

  1. Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set it aside for later.
  2. Wet Mixture: In a separate, larger bowl, cream together the butter, brown sugar, and granulated sugar with a mixer until the consistency becomes light and fluffy (approximately 1 minute). Now, integrate the egg and vanilla and mix until well combined.
  3. Combine: With your mixer set to low speed, gradually introduce the dry ingredients into the wet mixture. Once the two are blended (avoid over-mixing), fold in the graham cracker crumbs until they’re just incorporated.
  4. Layer Formation: Gently press half of your dough mixture into the bottom of your pre-lined pan. Here's a trick: Lift out the parchment paper along with the dough layer and set it aside—this becomes your top cookie layer for the bars.

Assembly:

  1. Layering the S'mores: First, reline your baking pan with a fresh parchment paper sheet. Press the rest of your dough mixture into the bottom. Now, assemble your s'mores by placing the chocolate bars first, followed by a liberal spread of marshmallow creme. Finally, place your reserved top cookie layer gently on the marshmallow creme.
  2. Baking: Position your baking pan in the preheated oven and bake for about 30 minutes. You’re looking for a lovely golden-brown color on top. Once baked, it’s crucial to allow the bars to cool completely; this helps them set and makes them much easier (and less messy) to cut.
