Spiced Apple Quick Bread with Sweet Cinnamon Drizzle

Bread Ingredients:

  • 1 large tart apple (such as Granny Smith), peeled and finely cubed
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon table salt
  • 1 cup white sugar
  • 6 tablespoons unsalted butter, softened
  • 2 large eggs, acclimated to room temperature
  • 2 teaspoons pure vanilla extract
  • ½ cup whole milk, brought to room temperature

For the Cinnamon Glaze:

  • ¼ teaspoon ground cinnamon
  • ½ cup confectioner's sugar, sifted
  • 1 tablespoon whole milk

Baking Instructions:

  1. Get your oven ready at 350°F (175°C). Prep a 9x5 inch bread pan with non-stick spray and fit it with a parchment sling for easy removal. Give it another spray for good measure.
  2. Toss the apple pieces with brown sugar and cinnamon in a bowl. Let this sit while you prepare the rest.
  3. Whisk the flour, baking powder, and salt together in another bowl. This will be your dry mix.
  4. Cream the butter and white sugar for 2 minutes in your mixer until it's pale and fluffy. Beat in eggs one by one, followed by vanilla, pausing to scrape down the bowl if needed.
  5. Gently combine the dry mix into the creamed butter, alternating with milk, until it's just incorporated.
  6. Layer half the batter into your pan, sprinkle over half the spiced apples, then repeat with the remaining batter and apples.
  7. Bake until it passes the toothpick test, which should take about 50-60 minutes. Let the bread rest in the pan for a bit, then free it and let it finish cooling on a wire rack.

Glaze Creation:

  1. For the glaze, just whisk the cinnamon and confectioner's sugar with milk until it's smooth and pourable.
  2. Once the bread is cool, drizzle it generously with your sweet cinnamon glaze.
